Ingredients (Serves 4)

  • 1 large onion, peeled and quartered
  • 1 medium butternut squash, peeled and cut into thick slices
  • 2 cloves garlic, peeled and minced
  • 3 tbsp olive oil
  • 3 large capsicums (red, yellow, and green), chopped into chunks
  • 2 tbsp garam masala
  • 1 tsp ground coriander
  • 1 tsp cumin
  • 800g canned puy lentils, drained and rinsed
  • 2/3 cup hot vegetable stock
  • 100g feta, crumbled
  • 3 tbsp pomegranate seeds
  • 3 tbsp fresh coriander, chopped

Method

Step 1: Prepare & Season the Vegetables

  1. Preheat the oven to 180°C (160°C fan-forced).
  2. Place the onion, butternut squash, and capsicums in a large roasting tin along with the garlic.
  3. In a small bowl, mix together the garam masala, ground coriander, cumin, and olive oil to form a paste.
  4. Coat the vegetables thoroughly with the spice paste to ensure even seasoning.

Step 2: Roast & Add Lentils

  1. Roast the vegetables in the oven for 30-35 minutes until they start to caramelize and soften.
  2. Add the drained lentils to the tray and pour in the hot vegetable stock.
  3. Return to the oven and bake for another 10 minutes, allowing the lentils to soak up the flavors.

Step 3: Finish & Serve

  1. Remove the tray from the oven and sprinkle crumbled feta over the top.
  2. Garnish with pomegranate seeds and freshly chopped coriander for a burst of freshness.
  3. Serve warm and enjoy!
