- 2 tbsp garam masala
- 1 tsp ground coriander
- 1 tsp cumin
- 800g canned puy lentils, drained and rinsed
- 2/3 cup hot vegetable stock
- 100g feta, crumbled
- 3 tbsp pomegranate seeds
- 3 tbsp fresh coriander, chopped
Method
Step 1: Prepare & Season the Vegetables
- Preheat the oven to 180°C (160°C fan-forced).
- Place the onion, butternut squash, and capsicums in a large roasting tin along with the garlic.
- In a small bowl, mix together the garam masala, ground coriander, cumin, and olive oil to form a paste.
- Coat the vegetables thoroughly with the spice paste to ensure even seasoning.
Step 2: Roast & Add Lentils
- Roast the vegetables in the oven for 30-35 minutes until they start to caramelize and soften.
- Add the drained lentils to the tray and pour in the hot vegetable stock.
- Return to the oven and bake for another 10 minutes, allowing the lentils to soak up the flavors.
Step 3: Finish & Serve
- Remove the tray from the oven and sprinkle crumbled feta over the top.
- Garnish with pomegranate seeds and freshly chopped coriander for a burst of freshness.
