For the Sauce:
1/3 cup Hoisin Sauce
2 tablespoons Salt Reduced Soy Sauce
2-3 teaspoons Caster Sugar or Honey (to taste)
1 teaspoon Sesame Oil
Method
Prepare the Sauce: In a small bowl, mix the hoisin sauce, soy sauce, caster sugar (or honey), and sesame oil. Stir well to combine and set aside.
Cook the Pork: Heat peanut or vegetable oil in a large pan over medium heat. Add the finely chopped onion and cook until soft and translucent.
Add the Pork: Increase the heat to high and add the pork mince. Cook, stirring frequently, until the pork is browned and cooked through.
Mix in the Sauce: Pour the prepared sauce into the pan with the cooked pork. Stir well and let it simmer for 2-3 minutes until the sauce thickens slightly and coats the meat evenly.
Assemble the San Choy Bow: Wash and dry the baby cos lettuce leaves. Spoon the pork mixture into each lettuce cup.
Garnish and Serve: Top with shredded carrots and fresh coriander leaves if desired. Serve immediately and enjoy!
